Our honey
Apicoltura Luca Finocchio honey is a guarantee of quality: it is processed naturally and without any adulteration.
A quality that means genuineness and goodness: our products are special because they are born from an almost maniacal knowledge, passion and respect for traditions!
A niche product, then, that achieves excellence through constant attention to the many factors that influence every single stage of the honey supply chain.
Selection of locations
We take our hives to absolutely pristine areas far from polluting sources so that our bees can suck only the best nectar.
That nectar that will then become pure honey.
Complete control of the honey supply chain
We pay special attention to controlling this factor, on which the final quality of the product depends greatly.
The choice of harvesting areas, transportation, natural ripening of the honey in the combs, honey extraction, decanting and potting at the right times: carefully controlling all these steps and more ensures exceptional honey like ours!
Honey extraction and potting
Honey is extracted “cold” and potted without resorting to any pasteurization process so as to maintain all its nutritional and organoleptic properties that make it a unique food for our well-being.
By virtue of this, immediately after extracting honey, it is liquid; subsequently it undergoes absolutely natural processes such as crystallization-which is precisely synonymous with quality-except for acacia, chestnut and honeydew honey: the latter, in fact, have a higher percentage of fructose that generally makes honey liquid and difficult to crystallize.
All others will gradually crystallize, depending on the percentage of the two sugars present.
In addition, the storage temperature also affects this process: at 14 degrees so honey crystallizes faster, and deviations up or down from this value affect the speed of crystallization.
If you want to make crystallized apples liquid, just melt them in a bain-marie, not exceeding 45 degrees.
Apicoltura Luca Finocchio, with its maniacal care, tries not to ruin the extraordinary product that bees give us.
Flavoring
Our flavored honeys are composed of about 90 percent honey and, for the remainder, a selected gluten-free and dye-free confectionery preparation.
Those present are natural.
Storage
We store our honeys in the company’s renovated temperature-controlled warehouse-the jars that end up on your tables are the result of a process in which passion and attention to all the details come together.
Environment
Our company has always cared for the environment, in the certainty that in a clean world live healthy bees that give birth to a genuine product.
Among the various actions for environmental care and eco-sustainability, we have come up with jar recycling: the glass jar is 100 percent recyclable but also reusable for other foods, thus extending the end of the product’s life cycle and creating a surplus value in environmental sustainability.
We offer several imaginative ideas, such as the ones you see in the picture!

For some time our company has been collaborating with the university and academic world to deepen our knowledge of beekeeping and the world of honey.
After the three dissertations completed by Fabiana and Lisa, other students are carrying out similar work on Apicoltura Luca Finocchio.
